Wild Strawberry Jam

There's something so exciting about stumbling across a wild strawberry patch.
One minute you're out exploring, & the next thing you know you're crouched down, pinching thumb sized berries from under leaves like you're a kid again.
These bright red tiny berries are absolutely nothing like the ones you buy in a grocery store. They pack a punch of flavor so fierce you'll end up sitting in the warm sun snacking & foraging for way longer than you expected.

As I was out exploring our off grid property, I found a sunny, sandy area along a trail. I started to smell something amazing and could see that there were tiny red berries EVERYWHERE.

Lucky me I always carry some sort of container on my exploring & foraging adventures. I ended up crouched in the sun for at least 20 minutes just filling a bag.
The berries themselves are SO fragile that I ended up just snipping the whole stem to transport them home to keep them as intact as possible.

I already knew my intention for these berries was a very simple jam.
As soon as I got home, I separated the stems from the berries and gave them a small rinse. Luckily it had just rained so the berries weren't AS sandy as they could have been.

All this jam takes is the berries, some sugar and maybe a squeeze of lemon juice. Thats it.
I can't give exact measurements, as I eyeball everything & adjust things according to the tastes my home prefers.

All you do is simply add your berries to a pot & add your sugar. Cook this over low heat until it thickens and no longer runs in the pan.

This is where I do a taste test.
More sugar? More lemon?
Make your adjustments as needed.

Once you're satisfied with the consistency, transfer it into a heat safe container and allow it to cool & set.
Or don't...and eat a warm delicious runny peanut butter & jelly sandwich immediately and enjoy every single moment of it.
